I was recently given the opportunity to review a “Chili Champ” gift basket which included a pre-made packet of Mexene Chili Mix, a bottle of Mexene chili powder, and a bottle of Louisiana Hot Sauce.  I wanted to do something a little different than a regular Chili, especially since the big football game was on Sunday.  So I decided to make a Southwest Chili Nachos… mmm was it good.  Below you will see the recipe and for more chili ideas head over to Chilicookoffwinner.com

Southwest Chili Nachos:

Ingredients

  • 1 package Mexene Chili Mix
  • 1lb Hamburger Meat
  • 1 package steak ( I used beef round tip steak)
  • 1 green pepper (chopped)
  • 1/4 yellow onion (minced)
  • 1 28oz crushed tomatoes
  • 2 tbsp minced garlic
  • 1 can black beans
  • 1 can whole kernel corn
  • 1 cup water
  • Bag of tortilla chips
  • Shredded Cheese for topping
  • Mexene Chili Powder (season to taste)

Steps:

  1. Lightly brown hamburger meat and steak in a separate pan
  2. Drain fat/oil and then transfer meats into your chili pot
  3. On stovetop at a medium heat combine the onion, garlic and green pepper, only cook for just a minute where you can start smelling aromas
  4. Add 1 cup water and Mexene chili mix, mix until evenly distributed
  5. Add all remaining ingredients (except cheese and chips), depending on how much “heat” add appropriate amounts of Chili powder.
  6. Simmer covered on low heat until bell peppers and steak meat become tender (about 30 minutes)
  7. Then serve over a bed of chips and top with cheese

If you like it spicy but the family can’t handle it, add some Louisiana Hot Sauce for a nice kick!!!
